1 small pkg frozen broccoli or flowerets from a large head
1 can condensed cream of mushroom soup (I use fat-free)
3-4 ounces of good sharp cheddar cheese
1/4 cup sour cream (I used to use this before I realized
the need to lower my cholesterol. I now leave it out)
1 large egg, beaten
2 hard-cooked eggs, sliced
10 or more crushed Ritz crackers (I use reduced fat)
Steam broccoli (al dente). Place in casserole dish. Lay
sliced eggs on top. Mix together first five ingredients and
glop on top of broccoli and eggs. Crush Ritz crackers in a
plastic bag and pour on top.
Bake in 325 degree oven for 45 minutes. Casserole should be
brown and bubbly.
If you don't like broccoli, substitute peas, corn, green
beans, asparagus or any combination thereof. You may add a
sautéed red pepper for color.
