1 lb. good ground beef, chicken or turkey
a small amount of olive oil
5 cups (about a pound) coarsely shredded cabbage
2 cans diced tomatoes with oregano, garlic and basil (I use Del
Monte brand)
1/3 - 1/2 cup raisins (I like HEB brand)
2 Tablespoons fresh lemon juice
1 Tablespoon brown sugar
1/2 teaspoon black pepper
Cook meat in olive oil for a few minutes - discard excess fat. Add cabbage, cover and cook
about 3 minutes or until wilted. Add the remaining ingredients
and bring to a boil. Reduce heat, cover and simmer 10 minutes to
blend the flavors. |
